my predicament is.....

eggs....... too many of them....




now i know this is not a particularly bad predicament to find oneself in but i am at a loss..




i wished for ducks for so long and i love them more than i ever thought i would, and i of course knew that they would lay, but i just forgot to count up just how many eggs we would be getting

each
and
every
day

lordy what is a girl to do with so many eggs?




stephen is enjoying them immensely confirming that they are the most delicious eggs he has ever eaten...

i am not eating them at all as i do not eat eggs....

i know, i know what sane person gets ducks knowing that they are not going to eat the little gifts they give!

so
in order to use up a few more i have made a huge bakewell tart and tomorrow plan on making a quiche... luckily stephen is a skinny runt that could do with putting on a little weight :)

i would happily give them away but all the folks we know already keep chickens and when asked have said how lovely duck eggs would be but we simply must take some hen eggs in exchange.....

however

some members of our family are delighted with our current predicament.....




there are not many hounds that start their day with duck egg omelette's and then lounge in the sun....

Hmm, I was just thinking bake cakes, but then only Stephen could eat them!
Just wondering,are there many opportunities to buy vegan cakes in Scotland or do you always make your own!Just thought, thats why you love Tiffin, NO EGGS, I love Tiffin too!

Oooh what lovely eggs, it'd have to be hens for me but we need a bigger garden. I'd say just make double/triple of what you're already making and then shove them in the freezer. When the days shorten and the ducks lay less you'll have a fab, delayed gift from them.

Aren't duck eggs supposed to excellent for making meringues? Not that I can make one but just an idea!

you could decorate them in time for easter,
i have fondest memories of lovely painted and decorated eggs all lined up on the fireplace for easter.
i even remeber making one look like a sheep, glueing cotton wool all over one and then match sticks for legs, oh happy memories :)

heh, heh, heh! Maybe you could make egg yolk facial masks! We have the same predicament but happily, there are a few large families with older hens that don't lay too much these days. They were really happy to receive several dozen gift eggs this past Sunday. Phew!

Here it is not uncommon for people with a lot of excess eggs to either sell them by the dozen (cheaper and so much more desired than what you can get at a supermarket), or trade them for other goods, like fruits, vegies, preserves...There's no one else around your area that would like some eggs in exchange for something you dont have an abundance of?

Perhaps you could start a breeding programme and become the main UK supplier of fertilised eggs. Sell them on ebay!!

Not every 4-legged friend has their own iron bedstead and duvet either!! That AND omelettes for brekkie. Can't be bad.

I sometimes have more hen and quail eggs than I can reasonably manage to sell, give away or otherwise creatively use so I pickle them -
Sarson's Distilled Malt Vinegar (it's the clear one)
add an amount of Bart's Pickling spice (you can add chillis if you're feeling wild),
heat together in a saucepan, allow to cool and then allow time for the spices to infuse - overnight is a rough guide.
Hard boil the eggs and put in a sterilised jar. Add the infused vinegar, seal and leave for a while. Present to unsuspecting guests. I know duck eggs are a bit tricky to keep so you might want to do a bit of your own research about how good an idea this is... it works with other eggs though - I haven't killed anyone yet... well not with my pickled eggs.

I agree with Paul, decorating eggs is full of endless possibilities. There are so many techniques. the duck eggs are beautiful, a blank canvas so to speak...
